The Jax winery was formed from a 28-year-old vineyard purchased in 1996 by printing executive named David Jackson (noted for having a 'green thumb'). David Jackson initially focused his attention on the vineyard, and his son Trent, and his daughter Kimberly (her Vanderbilt MBA earned her control of the business aspects of the operation) made the decision to convert the winery from a 'garage' operation to an 8,000 case output with distribution in 26 states and a strong presence in restaurants on both coasts. They hired Kirk Venge to make the wine, and replanted the vineyards (beginning in 2004 - a seven year project) to maximize production potential.They implemented an aggressive sustainability program; decided to harvest their fruit by hand; and were willing to leave as much as 50% of their fruit on the ground to assure quality.
