We all know Sauvignon Blanc, but what about Sauvignon Gris? This is a fascinating clonal mutation of Sauvignon Blanc that takes on a pink coloration as it approaches the point of ripening. It is increasingly used as a blending grape in the white wines of Bordeaux, but here we have a 100% Sauvignon Gris from Chile, from vineyards originally planted in 1912! So, what distinguishes Sauvignon Gris from Sauvignon Blanc? I would suggest that the Gris has a fuller, rounder mouthfeel, and the aromas are less dominated by citrus, grapefruit, and gooseberry. Instead, we find more orchard and stone fruits, as well as aromas of pineapple and tropical fruits. The palate is medium-high acidity, fresh, and with good volume. Serve with fresh vegetables, such as caprese salad, goat cheeses and white meats.
